Let's consider two common scenarios together:
Scenario 1: Your coffee and nuts are opened every day, with a portion taken and then closed.
Scenario 2: Your seasonings, such as spice powders, are used only occasionally for specific dishes.
For Scenario 1, I recommend a vacuum canister. Daily openings introduce new oxygen and moisture, and a vacuum canister effectively removes these elements that can cause deterioration.
For Scenario 2, I recommend an airtight canister. Since you don't plan to open it frequently, once you block all airflow, the canister will remain in an airtight state, and its contents won't undergo significant changes over time.
In summary: "Choose a vacuum canister for frequent openings, and an airtight canister for infrequent openings."
In addition to this method, I'll share two additional criteria to make your decision even easier.
For foods prone to flavor changes due to oxidation, like coffee beans and nuts, use a vacuum canister. For ingredients susceptible to spoilage from humidity, like flour and rice, an airtight canister is suitable.
For foods with irregular surfaces, like whole coffee beans, vacuum canisters are preferable. Processed powdered foods, on the other hand, are better suited for airtight canisters to prevent clumping caused by moisture.
Understanding these three tips should make your decision-making process clear and straightforward. Now, armed with this knowledge, you can easily choose the right container for your needs.

The result shows that lightly roasted coffee doesn’t show an obvious difference in room temperature and frozen. However, the dark-roasted one reveals an apparent difference!
The tightness of the container you choose and how you take out the coffee will also influence the result. A 100% airtight container, whether a jar or bag, would be great.Premium choices are vacuum containers and vacuum bags.
Choosing airtight and vacuum containers keeps the coffee's aroma, preventing interference from other stuff in the freezer and lowering the oxidation reaction between gas in the freezer and coffee.
To dig deeper, you can divide it into every single dose. Then, it can effectively decrease the moisture created due to temperature change.
If you put coffee in whichever bag, place it in the freezer and do not freeze it back soon. After soaking at room temperature, you’ll find that freezing coffee tastes worse than those in the room.

The definition that we discuss the freshness of coffee is to compare it with its original qualities, which means the coffee that has just been roasted.
The temperature, air, moisture, and light are the key elements that we should consider while storing coffee. The chemical reaction between the gasses emitted by roasted coffee beans and the interaction of these elements affect the loss of coffee aroma, such as "oxidation".
To keep coffee fresh as long as possible, we don’t only consider storage methods, but also the package during transportation.
Why?Coffee starts to release CO2 after roasting, if it hadn’t been properly packaged, it lost aroma fast before arriving. Therefore, we have some coffee purchase tips for you.
Since we know the temperature, air, moisture, and light are the key elements of storing coffee. First, we go with what temperature is best for storing coffee. It depends on the roast level of the coffee.
Compared to storing in the freezer and at room temperature of the dark roast coffee, the result shows the aroma with higher losses at room temperature than in the freezer. But the light roast coffee seems to differ to a smaller degree among the storage conditions. (Cotter and Hopfer, 2018)
Store coffee in an opaque container or bag, to avoid light compromising the taste of your coffee. Putting it into a cabinet would be a good idea.
The best way of storing large amounts of coffee is to subpackage. Put the bulk of the coffee in a cool dark place, keep a small quantity in a container for daily use, you only open the larger container while refilling the smaller one. This can reduce air exposure for a large amount of coffee.
If you have a big amount of dark roast coffee and want to store it in the freezer, coffee will get moisture every time you get it out of the freezer and refreeze it, which not only causes the loss of aroma, but also the possibility of going bad. So you proportion it into several bags, only get one bag of the amount that you need, and prevent refreezing it.
Limiting the access of oxygen to the product is of key importance for guaranteeing freshness and quality of specialty coffee - an area in which the packaging has a key role to play. (Folmer, 2017)
If you buy a small quantity of coffee, the coffee bag will just suit you. Choose a valve bag with a zip-seal that can avoid air exposure. If you are doing proportion for long-term storage in the freezer, vacuum-sealed bags will be the better choice.

But without a valve, storing ground coffee or coffee beans that don’t release much CO2 would be a great idea.

The Brewers Cup competition is a manual coffee brewing competition that promotes craftsmanship in coffee brewing and coffee service. This competition includes two parts. The first part is compulsory service in which everyone uses the same coffee, grinder, and water. The second part, which more people are familiar with, is open service. This part gives you 10 minutes to showcase your coffee, brewing, and service to the judge. The top 6 competitors combined scores move to the final round, and the compulsory score is kept for the final round but the open service score reset. The combined final round open service score and compulsory score determine the placement.
Ply Pasarj, the 5th place in WBrc 2021, is the co-owner of Rogue Wave Coffee. He was a customer at Rogue Wave Coffee but after about 2 years of being a regular customer, he was invited to join them.

Before joining the coffee industry, Ply Pasarj has been being a manual brewing coffee lover who spent time experimenting and exploring many methods. His first ever brewers cup competition was in early 2019, and he was pushed by my barista, Sheh, to compete because she thought Ply Pasarj would do well. He was around 4 months into working in coffee full time then. He placed 6th in the Canada Brewers cup competition. The whole experience made him fall in love with the coffee competition.
For this year's competition, Ply Pasarj broke out from the norm by doing a blend of two beautiful gesha from Panama. One coffee is from Abu Coffee, a 144 hours anaerobic slow dry natural, and the other coffee is a washed gesha from Finca Carmen Estate Coffee. Ply combined 8.5g of the natural gesha with 4g of the washed gesha to give a vibrant citrus acidity, tropical fruit sweetness, balanced floral, and a soft lingering finish. While both of these coffees by themselves are capable of being on the world stage, Ply had a specific flavour profile in mind and was only able to get by blending. It took him a very long time to finalize his coffee, and in fact, Ply did not finalize his decision until a couple of days before the competition.
I was very fortunate to be able to debut the plastic Origami dripper at the competition, and also my recipe works really well with the plastic origami dripper as well since I use lower temperature water. - Ply Pasarj.

Choosing coffee to use was the most challenging for him. The timing was not great and they were all not sure if the event will be postponed again or not due to the pandemic. Sourcing coffee was hard in itself. Ply Pasarj personally thinks himself is also not great about making decisions, there are just so many good coffees out there.
When I was called for the last spot in the top 6. It was so surreal. Everyone was so nervous, who the last spot would be, and being called that person was really surreal. I still get goosebump thinking about that moment. I am really proud of myself.- Ply Pasarj.
I love competing and being on stage as nervous as it is. It is my way of pushing myself to learn more about coffee. In addition, meeting new and amazing people at coffee competitions is something I look forward to every time. I think for the most part Milan coffee culture is still the traditional single shot espresso with Arabica and Robusta blend. I love it for the experience but it would be hard to have that every day. It was fascinating to see that pretty much all the restaurants have a two or three-group espresso machine. As a filter coffee lover myself, there isn't a lot of choice for single-origin filter coffees but I see that it is growing. COVID-19 has definitely changed the market. During the peak of COVID, many people started brewing coffee at home, and therefore home equipment was a hot item. Now that many people still work from home, the demand for retail coffee bags remains high. As people learn to brew coffee at home, they also learn to appreciate the art of coffee making and some also seek after interesting and rare coffee. So now we are seeing this increase in demand for more expensive coffee alongside regular coffee for home brewing. The big impact we see was on many of the cafes, as coffee drink sales plummeted during lockdown. Some of our clients even had to close their business. Currently, we are seeing the impact of high freight cost, long wait time, and high demand which ultimately impact the price of the end products for consumers.- Ply Pasarj
We are very fortunate to be a roasting company. As demand for wholesale coffee goes down, we saw an increased demand for retail coffees. I implement a local coffee and gear delivery system for our business in the first week of our lockdown which allows us to get coffee to our customers right away and keep our business afloat. We were also very fortunate to be distributing many of the coffee gear such as Origami and 1ZPRESSO, so while there are supply chain issues, we were able to fulfill many of our retail and wholesale customer demand. The list below is tested based on two brands of coffee scoops with similar tech.
We’ve tested it for five times and measured the deviation by scale.
We could find that no matter which kind of scoop, the deviation is much more significant than we imagined.
That’s also why the scoop will finally be used only to take out the beans.
When you need to get accurate grams, you still need to use the scale.
Our R&D team found that the combination of the shape of scoop and the action of leveling,
we could get a stable number no matter if it’s applied in coffee beans or ground coffee. We could also see it as a reasonably precise coffee scoop.
For this, we’ve tested 20~30 kinds of beans and developed a scoop that could get around 10g of coffee beans or ground coffee.
